The A Game – Zafferano Collaborates with Food Artist Tom Wolfe

Whenever we collaborate with avant-garde celebrity food artist Tom Wolfe we always know that we will be in for an exciting ride – as was the case when we hooked up together for the International Gaming Technology gala dinner at the glorious Banqueting House.

The dinner was the social highlight of the mesmerising ICE Totally Gaming Expo at ExCel which show-cased this year’s ground breaking innovations in gaming technology. With an audience dedicated to leisure and pleasure the evening had to be at the top of its game…

The solution was a night of contrasts.

Downstairs in The Undercroft Tom was the ringmaster with a catwalk parade of models, wearing his incredible canape collection and serving; Zafferano signature canapes Foie gras mousse cones with quince relish and Beetroot jelly, goat’s cheese chiboust and thyme.  The talking point was Tom’s Dali-esque Eggs in Sand installation, whereby egg shells containing a delicately flavoured mango chicken salad were semi-buried in a surrealist beachscape for guests to excavate themselves. 

Beneath the majestic Rubens ceiling, guests regrouped for dinner which was markedly classical by contrast. The Great Hall basked in golden (flame-less!) candlelight as guests were served Butternut pannacotta, dukka pastry and toasted pumpkin followed by an unctuous slow cooked sticky Short rib and smoked sirloin of beef, aligot potatoes, roasted onionDessert sauntered back into the realm of high fashion with a sculptural Golden Sphere with Textures of Black Forest.
